  • Cais Na Tire, Tipperary This unique sheep’s cheese is aged for six months – allowing it to develop toasty caramel notes and a rich mouthfeel. This works incredibly well with the refreshing Bin Bawn and it’s crisp finish. Working along side the bubbles it prepares your palate for more! For pairing with Bin Bawn pale ale (ABV: 4.6%, IBU: 38)
  •  Smoked Knockanore, Knockanore Farmhouse Cheese, Limerick. This cheese is cold oak smoked for ten days to create a sweet but fully smoked flavour – accompanying the meaty umami notes of the original aged cheddar. The strong malty base in the Long Meadow IPA echo these savoury umami notes – and matches the mouth-filling flavour. For pairing with Long Meadow IPA (ABV: 5.5%, IBU: 60)
  •  St. TolaInagh Goat Farm, Clare. Line Blocker and St. Tola goats cheese pair perfectly due to their complementary flavours. The combination of Citra, Mosaic and Amarillo create a real citrus hit – that will bounce of the acidity in the goats cheese. A refreshing and summery combination! For pairing with Line Blocker: (ABV: 4.9%, IBU: 54)
  • St. Gall, Fermoy Natural Cheese Company, Cork. This rich and malty American style ale is the perfect match for Frank & Gudrun Shinnick’s award winning Saint Gall. As this hard cheese ages it develops a beautiful sweet and nutty flavour – and retains an earthiness not dissimilar in character to Bamwick’s Brown Ale. With a distinctive palate-tingling finish, they serve to enhance the flavour of each other. Exactly what a good pairing is designed to do! For pairing with Blackwell Stout  (ABV: 5.8%, IBU: 26)
  •  Young Buck, Mike’s Fancy Cheese, Down. The traditional beer pairing for a blue would be a boisterous stout. But for something a little different a vivacious and bright fruity beer can work incredibly well. The fresh citrus and tropical fruit of Ballykilcavan’s Secret Passion not only works to brighten the palate in preparation for each mouthful of this stunningly rich raw milk cheese – but complements the delicate tropical finish. A match made in heaven! For Pairing with Walnut Whip Stout  (ABV: 6.5%, IBU: 55)
  • Gubbeen, Gubbeen Farmhouse, Cork. This nutty, sweet and creamy cheese works well with anything that cleanses the palate between bites. Meaning this session IPA fits the bill perfectly. Light and refreshing with rich and creamy! For pairing with Millhouse IPA (ABV: 3.5%, IBU: 48)
